You must blanch your celery to preserve the sweet flavor. This involves cutting off the sunlight to the stems. Accomplished by wrapping them with newspaper at a certain stage. Next time your celery will be sweeter. If it’s still in your garden it’s probably not too late to blanch it a little and improve the flavor!

Celery that gets sunlight is extra green and extra strong in flavor. It's hard to enjoy raw, but it's good in soups/stews.

I agree!

I fear that attempts today to form multidisciplinary teams to assess cases considered for cross-sex hormones would be decried by trans activists (and perhaps their cis allies in the professions) as "gatekeeping" that could harm "trans kids" and perhaps even drive them to suicide by delaying their transition.

Also, even if such team could be assembled, it's possible that representatives from other disciplines might be as captured by gender identity ideology today as the prescribers of cross-sex hormones. In that case there wouldn't be the necessary objectivity.

Well, that's all the more reason to demand that health care establishment implement Cass's recommendations!
