Garden Highlight 9: Celery. Unfortunately this is my first ‘meh’ of the year. Finding the celery quite bitter. Maybe it’s just too early to really start to use it. Tried it in salad and with peanut butter and raisin. No one was enthused, will start to hide it in chili, stir fry, etc.
You must blanch your celery to preserve the sweet flavor. This involves cutting off the sunlight to the stems. Accomplished by wrapping them with newspaper at a certain stage. Next time your celery will be sweeter. If it’s still in your garden it’s probably not too late to blanch it a little and improve the flavor!

Celery that gets sunlight is extra green and extra strong in flavor. It's hard to enjoy raw, but it's good in soups/stews.
